Instructions

  1. Peel and slit prawns through the back partly and devein.
  2. Heat olive oil and butter in frying pan or wok.
  3. Stir in garlic.
  4. Add prawns and saute gently for 2 minutes.
  5. Add onions and mushrooms and saute until mushrooms are nearly done.
  6. Add dry sherry and simmer for 3 minutes.
  7. Serve in a hot chafing dish.
