Instructions

  1. Cream shortening with vanilla.
  2. Add sugar gradually, beating til fluffy.
  3. Add egg and beat well.
  4. Thoroughly blend in 1 3/4 cups coconut.
  5. Combine flour, salt, and baking soda.
  6. Add 1/2 of this mixture to the creamed mixture; mix well.
  7. Add remainder of mixture; stir til it holds together.
  8. Shape into 1" balls.
  9. Roll in remaining coconut.
  10. Place 3/4" apart on lighly greased cookie sheet.
  11. Bake at 325 for 15-20 minutes.
  12. Let cool on cookie sheet, then remove.
