Instructions

  1. Cook broccoli in stock with onions until soft.
  2. Place in blender and blend quickly.
  3. Leave small pieces of broccoli.
  4. Make a roux using butter and flour.
  5. Cook 3 minutes, stirring constantly.
  6. Add broccoli and stock to roux.
  7. To avoid lumps, stir constantly until thickened.
  8. Thin to preferred consistency with cream.
  9. Add seasonings (and cheese) and serve.
