Instructions

  1. Rinse quinoa in plenty of water, drain.
  2. In medium saucepan, bring the two cups of water to a boil over high heat.
  3. Stir in quinoa.
  4. Reduce heat and simmer, uncovered, for 15 minutes or until water is absorbed.
  5. Remove from heat and let cool
  6. In small bowl, mix soy sauce, vinegar, honey, curry powder and red pepper flakes, stirring until completely blended
  7. Combine, in a serving bowl, remaining ingredients.
  8. Gently stir in cooled quinoa, then soy sauce mixture.
