Instructions

  1. Put sliced okra in a bowl.
  2. Sprinkle with salt, liberally.
  3. Cover with very cold water.
  4. Refrigerate for at least 1 hour.
  5. Drain, rinse, drain again.
  6. Roll slices in seasoned cornmeal until well coated.
  7. Fry in hot oil about 1/2" deep until browned and crisp.
  8. Drain on paper towels, serve hot.
