Instructions

  1. Heat oil in a big deep skillet or pot.
  2. Add the onion and cook until softened.
  3. Add the garlic, do not let it brown.
  4. Add peppers, chilies and cook for 5-10 minutes.
  5. Stir in corn and then add stock. Boil 5 minutes.
  6. Add spinach and cook until wilted.
  7. Season with salt and pepper, then add cilantro and green onion to garnish.
