Instructions

  1. Cook the quinoa in the water. Allow to cool slightly.
  2. In a large bowl, combine the oil, lime juice, cumin, coriander, cilantro and scallions.
  3. Stir in the beans, tomatoes, bell peppers and chilies.
  4. Add the cooled quinoa.
  5. Season with salt and pepper to taste.
  6. Serve cold.
