Instructions

  1. Preheat oven to 350°F.
  2. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
  3. Stir in carrots, apples, raisins and nuts.
  4. Combine milk, beaten eggs and vanilla.
  5. Pour liquid ingredients into dry ingredients.
  6. Stir until ingredients are moistened. DO NOT OVER MIX.
  7. Fill muffin cups 3/4 full.
  8. Bake for 15-20 minutes.
