Instructions

  1. Melt butter in medium frying pan.
  2. Add onions and celery and saute until soft.
  3. Meahwhile, in a small bowl, lightly beat egg yolks with salt and red pepper flakes and set aside.
  4. Add flour to pan, and mix well.
  5. Immediately add evaporated milk gradually, stirring constantly to thin flour mixture.
  6. Add regular milk, stirring constantly, until completely incorporated.
  7. Add egg yolk mixture, mix well, and cook 10 minutes, stirring frequently.
  8. Remove from heat; add the crab and shrimp and mix well.
  9. Add 8 oz. of the cheese and mix well.
  10. Pour mixture into a well-greased 3-quart casserole dish.
  11. Sprinkle remaining cheese over the top.
  12. Bake uncovered at 375F for 15 minutes, until cheese melts.
