Instructions

  1. Preheat oven to 375 degrees.
  2. Heat medium skillet over medium-high heat; add beef and onion.
  3. Cook until beef is brown and crumbly, about 10 minutes.
  4. Drain the grease off the beef.
  5. Add enchilada and tomato sauces to skillet; stir well.
  6. Cook until slightly thickened, about 10 minutes.
  7. Spoon beef mixture into a greased 2-quart baking dish.
  8. Combine beans and evaporated milk in a small bowl; spread over beef mixture.
  9. Arrange whole tortilla chips around the edge of dish.
  10. Top casserole with crushed chips; sprinkle with cheese.
  11. Bake casserole until hot and bubbly, about 20 minutes.
