Ingredients

2 cups Egg Beaters egg substitute or 8 eggs

2 cups skim milk

1 lb low-fat sausage

1 teaspoon dry mustard

6 -8 slices whole wheat bread, cubed

1 cup sharp cheddar cheese, grated

1/2 teaspoon garlic salt

1 teaspoon pepper

4 ounces green chilies

1/2 cup onion, diced

1/2 cup celery, chopped

1/2 teaspoon season salt
Instructions
- Brown the sausage and drain fat.
- Beat eggs with milk, salts, pepper, mustard. Stir in bread, sausage and cheese and optional items.
- Pour this mixture into a greased 9x13 inch baking dish.
- Bake for 45-50 min at 350 degrees.
