Instructions

  1. Place bacon in 10-inch nonstick skillet over medium-high heat.
  2. Cook, stirring occasionally, until browned, 5 minutes.
  3. Add potatoes and onion; cover.
  4. Cook, stirring occasionally, until tender, 6-7 minutes.
  5. Beat eggs, 1/2 cup water, 1/2 t salt and 1/4 t pepper; stir in broccoli and 1/2 cup cheese.
  6. Add to skillet, cover.
  7. Over medium heat, cook until set, 8-10 minutes.
  8. Remove from heat.
  9. Sprinkle with remaining cheese; cover.
  10. Let stand until cheese is melted, 2-3 minutes.
