Ingredients

1 1/2 teaspoons lemon juice

1 cup cooked brown rice

1 1/2 teaspoons dried parsley

2 tablespoons grated parmesan cheese

1 1/2 tablespoons instant minced onion or 1 small onion, chopped and sauted

1 cup cottage cheese

1 cup grated cheddar cheese

4 eggs

6 -8 cups fresh spinach, chopped and steamed (one large bunch)
Instructions
- Preheat oven to 350°.
- Mix the first 7 ingredients together.
- Separately mix the Spinach Mixture ingredients.
- Spread the ingredients from the first mixture in the bottom of a greased casserole.
- Spread the spinach mixture over them and bake at 350 degrees until firm, 45-60 minutes.
