Instructions

  1. Preheat oven 350 degrees.
  2. Spray muffin tins with cooking oil.
  3. Saute first 6 ingredients.
  4. Add shredded cheese to eggs until blended.
  5. Place sauted veggies and ham in bottom of each tin (approx. 1/2 tsp-depending on size of tins).
  6. Pour egg and cheese mixture over each tin almost to top.
  7. Bake 20 - 30 minutes again depends on size of tins.
  8. Serve hot or cold.
