- Heat oil in frypan.
- Add onion - cook 3 minutes till soft.
- Add chicken and garlic and ginger.
- Cook 7 minutes till browned.
- Break up lumps of mince with wooden spoon whilst cooking.
- Add capsicum and cook further 5 minutes.
- Add fish sauce and sweet chili sauce and season to taste.
- Stir in coriander.
- Serve with noodles or rice or toss through salad leaves.
