Instructions

  1. Heat oil in frypan.
  2. Add onion - cook 3 minutes till soft.
  3. Add chicken and garlic and ginger.
  4. Cook 7 minutes till browned.
  5. Break up lumps of mince with wooden spoon whilst cooking.
  6. Add capsicum and cook further 5 minutes.
  7. Add fish sauce and sweet chili sauce and season to taste.
  8. Stir in coriander.
  9. Serve with noodles or rice or toss through salad leaves.
