Instructions

  1. Cook the onion and pepper in a skillet in the butter until the onion is translucent.
  2. Add tomatoes.
  3. simmer 5 minutes.
  4. Add the eggs.
  5. Cook like scrambled eggs.
  6. When cooked sprinkle the cheese over the eggs and allow it to melt.
  7. Serve warm with hot tortillas and salsa.
