Instructions

  1. Combine butter, flour and powdered sugar n bowl, mix until crumbly.
  2. Press into ungreased 8-inch square pan.
  3. Bake 350°F - 8 minutes or until golden brown.
  4. Cool in pan on rack.
  5. Combine sugar, 2 tbsp flour & baking powder in bowl.
  6. Add eggs, lemon juice & rind. Mix well.
  7. Pour evenly over baked, cooled crust.
  8. Bake 350°F for 25 minutes.
  9. Top will puff-up while baking but will fall when cooling.
  10. Cool in pan on rack & cut into 2-inch squares.
  11. Sprinkle with powdered sugar.
  12. Makes 16.
