Instructions

  1. Place roast, fat side up, on a rack in a shallow roasting pan.
  2. Sprinkle all over with garlic powder and rub into meat.
  3. Cut onion into slices, and put all over top of roast, and hold in place with tooth picks.
  4. Bake at 350°F for 2 hours or until meat thermometer registers 145°F (med-rare).
  5. Let stand 10 minutes before slicing.
