Instructions

  1. Wash and chop broccoli into bite size pieces.
  2. Cook broccoli in a small amount of salted water until tender.
  3. While broccoli is cooking, melt butter in heavy saucepan. Add onion and cook until tender and translucent.
  4. Stir in flour to make roux; slowly add broth and cream.
  5. Stir and cook just until thickened.
  6. Add salt, nutmeg, and drained,cooked broccoli.
  7. Just before serving, stir in cheese.
  8. Serve with crusty bread.
