Instructions

  1. Heat butter and oil in large nonstick skillet over medium-high heat. Add all but 2 tablespoons green onions; sauté 30 seconds.
  2. Add rice and sauté until heated through, about 4 minutes.
  3. Add peas, lemon juice, zest, parsley, and salt and pepper. Sauté 2 minutes to blend flavors.
  4. Garnish with remaining green onions and optional chopped walnuts and serve immediately.
