Instructions

  1. Wash greens thoroughly, removing any grit and large stems.
  2. Place greens in dutch oven with water and salt.
  3. Bring to a boil and cook for 30 minutes uncovered.
  4. Add vinegar, sugar, and bacon drippings.
  5. Reduce heat to simmer and cook at least 1 hour covered.
  6. Fry bacon and crumble.
  7. Saute chopped onion until tender.
  8. Add bacon and onion and cook an additional 10 minutes.
  9. Serve with vinegar flavored with whole red pepper.
