Instructions

  1. Preheat oven to 400 degrees. Coat muffin tin with cooking spray.
  2. Place apples on paper towels and squeeze until barely moist. Set aside.
  3. Combine flour and next 6 ingredients in a medium bowl; stir with a whisk Make a well in the center of mixture.
  4. In another bowl, whisk together milk, oil, vanilla, yogurt, and egg. Add to well of flour mixture, stirring just until moist.
  5. Stir in apples. Spoon batter in muffin cups. Bake for 8-10 minutes or until muffins spring back when touched lightly in center. Remove muffins immediately and cool on wire rack.
