- Chop onion in small pieces.
- Chop broccoli into small pieces and set aside.
- Cook onion and garlic in olive oil in 2 quart pot until onion is clear.
- Add chicken broth and simmer 10 minutes.
- Add broccoli pieces and margarine. Cover and simmer for 1 hour.
- Grate cheese and add to soup. Stir well.
- Turn off heat and add half and half.
- Serve warm.
