Instructions

  1. Chop onion in small pieces.
  2. Chop broccoli into small pieces and set aside.
  3. Cook onion and garlic in olive oil in 2 quart pot until onion is clear.
  4. Add chicken broth and simmer 10 minutes.
  5. Add broccoli pieces and margarine. Cover and simmer for 1 hour.
  6. Grate cheese and add to soup. Stir well.
  7. Turn off heat and add half and half.
  8. Serve warm.
