Ingredients

2 tablespoons olive oil

1 (3 lb) boneless lamb shoulder, cubed

1 teaspoon cumin

1 teaspoon cinnamon

1 teaspoon coriander

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup dried apricot, sliced

1/3 cup orange juice

1 tablespoon ground almonds

1/2 teaspoon orange zest

1 1/4 cups chicken broth

1 tablespoon toasted sesame seeds

1 1/2 cups chopped onions
Instructions
- In lg skillet, saute onion in oil for 1 minute.
- Add lamb, and the spices.
- Cook and stir for 5 minutes.
- Add apricots, orange juice, almonds, and orange zest.
- Put into a 3 quart baking dish.
- Stir in broth.
- Cover and bake at 350°F for 1-1/2 hours.
- Sprinkle with sesame seeds.
