Instructions

  1. Combine all ingredients, except the chicken, and mix well.
  2. Add the chicken and stir to combine.
  3. Cover and place in refrigerator to marinate at least 1 hour (I marinated mine 5 hours).
  4. Spray a baking dish (or casserole) with cooking spray and add chicken mixture, marinade and all. Stir in the red pepper.
  5. Cover and bake @ 375* for 45 minutes.
  6. Serve over rice.
