Instructions

  1. Season flour with salt and pepper.
  2. Season meat with salt and pepper.
  3. Dredge meat in flour and brown in batches in 2 tsp.
  4. of hot oil, adding oil between batches if needed (do not over crowd.) Place in bowl when finished.
  5. In the same pot add 1 tsp.
  6. oil and onion saute about 2 minutes and add garlic and tomatoe sauce.
  7. Stir about 3 to 4 minutes.
  8. Add meat to the mixture and add herbs.
  9. Simmer about 1 1/2 hours.
  10. Add vegetables last 30-45 minutes.
  11. Season with salt and pepper if needed.
  12. Serve over rice.
