Instructions

  1. Melt butter in sauce pan with tight fitting lid.
  2. Add garlic and carrots; cook, stirring frequently until carrots begin to color, about 5 minutes.
  3. Add rice; stir.
  4. Add broth, zest and salt.
  5. Bring to a boil and simmer covered, about 20 minutes.
  6. Remove garlic and fluff rice.
