Instructions

  1. Preheat oven to 400 degrees F.
  2. Soak oats in yogurt or sourcream just enough to make it moist.
  3. Sift dry ingredients (flour, salt, baking powder & baking soda) into a bowl.
  4. In a separate bowl, add oil, sugars, and egg.
  5. Beat until well blended.
  6. Gradually fold in dry ingredients.
  7. Add chopped cranberries and orange zest.
  8. Put in greased muffin tins.
  9. Bake for 20 minutes.
