  1. CAULIFLOWER FLORETS:
  2. Plunge cauliflower florets in boiling water for 1 minute.
  3. Plunge florets in icing water, drain and let dry.
  4. VINAIGRETTE:
  5. Mix together, lemon juice and sugar until sugar disolves.
  6. Add mayonnaise, lemon zests, olive oil, yellow mustard, salt and pepper,mix well.
  7. Add onions, chives, cranberries and chopped eggs to cauliflower florets, pour vinaigrette and mix well.
  8. Refrigerate for 1 hour.
