Ingredients

3/4 cup celery, chopped

1 medium onion, chopped

3 garlic cloves, minced

1 tablespoon canola oil

3 (14 1/2 ounce) cans chicken broth

2 (15 ounce) cans black beans, rinsed and drained

1 (16 ounce) jar salsa (I used medium)

1 cup cooked long-grain rice

1 tablespoon lime juice

1 teaspoon ground cumin (I omitted it)

1 cup cubed cooked chicken breast
Instructions
- In a large saucepan, saute celery, onion and garlic in oil until tender. Stir in the remaining ingredients. Heat through.
- Diabetic Exchanges : 1 1/2 meat 1 starch.
