Instructions

  1. Sprinkle steaks on both sides with pepper and salt.
  2. Heat oil in a large skillet over high heat until hot.
  3. Add steaks, cook 4 minutes, turning once.
  4. Reduce heat to medium-high, cook an additional 3-4 minutes for medium-rare or until desired doneness, turning once.
  5. Remove skillet from heat; place steaks on a warm platter.
  6. Pour off all but 1 Tbs of the drippings.
  7. Stir in flour; cook over medium heat 30-60 seconds stirring constantly.
  8. Whisk in whiskey, water and sugar.
  9. Bring to a boil, scrapping up any browned bits from bottom of the skillet.
  10. Spoon sauce over steaks.
