Instructions

  1. In a medium mixing bowl, beat shortening with an electric mixer on medium to high speed for 30 seconds.
  2. Add the granulated sugar, brown sugar, pumpkin pie spice, baking powder, and baking soda.
  3. Beat until combined, scraping sides of bowl.
  4. Beat in the egg and pumpkin.
  5. Beat in as much of the flour as you can with the mixer.
  6. Stir in remaining flour.
  7. Drop dough by a rounded teaspoon 2 inches apart onto an ungreased cookie sheet.
  8. Bake cookies in a 375 degree F oven for 8 to 10 minutes or until tops seem firm.
  9. Transfer cookies to a wire rack; cool.
