Instructions

  1. In a medium saucepan, over medium heat, put rice, stock, orange rind, seasonings and butter.
  2. Bring to a simmer.
  3. Gently cook, covered, until rice has absorbed the liquid.
  4. Approximately 40-45 minutes.
  5. When rice is done, fluff with fork, add the orange juice, onions and parsley.
  6. Mix and serve.
