Ingredients

1 lb green beans, trimmed and cut crosswise in half

2 tablespoons olive oil

1/2 cup onion, finely chopped

2 garlic cloves, finely chopped

1/2 teaspoon cinnamon

1/2 teaspoon ground cumin

1/2 teaspoon black pepper

1 pinch cayenne pepper

1 (16 ounce) can plum tomatoes, drained and coarsely chopped

1 teaspoon salt

3 teaspoons honey

1 tablespoon fresh lemon juice
Instructions
- Place beans in a steamer with boiling water. Steam until they turn very bright green, but are still crunchy, about 5 minutes. Rinse in steamer basket under cold running water. Drain.
- Heat oil in a wide, shallow saucepan. Add onion and garlic; saute until softened, about 5 minutes. Add cinnamon, cumin, black pepper and cayenne; saute 1 minute. Add tomatoes and 1/2 teaspoons salt. Bring to boiling, stirring frequently to prevent sticking, 8-10 minutes or until mixture has a thick, jam-like consistency.
- Stir in honey. Add beans, lower heat. Cook, covered, at a slow simmer, stirring occasionally, until beans are tender, about 15 minutes. Stir in lemon juice. Season with remaining salt, if needed.
