Instructions

  1. Place beans in a steamer with boiling water. Steam until they turn very bright green, but are still crunchy, about 5 minutes. Rinse in steamer basket under cold running water. Drain.
  2. Heat oil in a wide, shallow saucepan. Add onion and garlic; saute until softened, about 5 minutes. Add cinnamon, cumin, black pepper and cayenne; saute 1 minute. Add tomatoes and 1/2 teaspoons salt. Bring to boiling, stirring frequently to prevent sticking, 8-10 minutes or until mixture has a thick, jam-like consistency.
  3. Stir in honey. Add beans, lower heat. Cook, covered, at a slow simmer, stirring occasionally, until beans are tender, about 15 minutes. Stir in lemon juice. Season with remaining salt, if needed.
