Instructions

  1. Cook the onions until lightly brown.
  2. Add the squash, seasoning with salt and pepper to taste and cook until tender, about 8 minutes.
  3. Remove from heat and stir in mayo, 1 cup of the cheese, and 1 cup of the crumbled crackers.
  4. Pour into a 1 and 1/2 quart baking dish and sprinkle with remaining cheese, then remaining crackers.
  5. Bake for 25 minutes at 350 degrees.
