Instructions

  1. Over low heat in a large skillet, sauté onion until just translucent.
  2. Increase heat to medium and add cabbage. Continue cooking until wilted.
  3. Add tomatoes and water.
  4. When in comes to a boil, add rice, parsley, salt and pepper.
  5. Reduce heat to simmer, cover and cook until very little liquid remains and rice is tender.
  6. Serve.
