Instructions

  1. Preheat oven to 200C/180C fan forced and line a large baking tray with baking paper.
  2. Place potatoes in a bowl and add oil, rosemary, thyme and garic and season with salt and pepper and then toss to coat.
  3. Spread the potatoes mixture on prepared tray in a single layer.
  4. Roast for 50 to 60 minutes until golden and crisp and serve sprinkled with extra thyme sprigs.
