Instructions

  1. Following box directions, bake the white cake in two 9" cake pans; allow it to cool.
  2. In a bowl, combine strawberry ice cream with fresh cut strawberries.
  3. Trim the tops off each cake, leaving a flat surface.
  4. Lay first cake layer into a 9" springform cheesecake pan.
  5. Pour the ice cream mixture to make an ice cream layer.
  6. Lay the 2nd baked cake on top.
  7. Place in the freezer for 3-4 hours.
  8. In a food processor, mix vanilla wafer cookies.
  9. Also food process the freeze-dried strawberries.
  10. Remove the springform cheesecake pan.
  11. Combine both the vanilla wafer cookies and freeze-dried strawberries in a bowl.
  12. Add white frosting on top of the cake, spread evenly to cover top and sides.
  13. Sprinkle the pulverized the vanilla wafer cookies and freeze-dried strawberries on top of the cake.
  14. Add pulverized the vanilla wafer cookies and freeze-dried strawberries to the cake sides.
  15. Pipe several icing mounds on top of the cake.
  16. Place fresh strawberries on the icing mounds.
