- Following box directions, bake the white cake in two 9" cake pans; allow it to cool.
- In a bowl, combine strawberry ice cream with fresh cut strawberries.
- Trim the tops off each cake, leaving a flat surface.
- Lay first cake layer into a 9" springform cheesecake pan.
- Pour the ice cream mixture to make an ice cream layer.
- Lay the 2nd baked cake on top.
- Place in the freezer for 3-4 hours.
- In a food processor, mix vanilla wafer cookies.
- Also food process the freeze-dried strawberries.
- Remove the springform cheesecake pan.
- Combine both the vanilla wafer cookies and freeze-dried strawberries in a bowl.
- Add white frosting on top of the cake, spread evenly to cover top and sides.
- Sprinkle the pulverized the vanilla wafer cookies and freeze-dried strawberries on top of the cake.
- Add pulverized the vanilla wafer cookies and freeze-dried strawberries to the cake sides.
- Pipe several icing mounds on top of the cake.
- Place fresh strawberries on the icing mounds.
