Instructions

  1. Preheat oven to 350 F degrees.
  2. Cream sugar and butter.
  3. Add eggs, beating till light.
  4. Stir in bananas, vanilla, and yoghurt.
  5. Combine and add flour, baking powder and baking soda.
  6. Stir in coconut.
  7. Pour batter into greased loaf pan, mini-loaf pans, or muffin tins.
  8. Bake for 1 hour or less, depending on pan size.
