Instructions

  1. Cook potatoes in a covered saucepan in boiling water for 15-20 minutes, or until just tender; drain well.
  2. Peel and cube potatoes.
  3. In a very large bowl combine celery, onion, mayonnaise, vinegar, mustard, salt and pepper.
  4. Add potatoes and eggs.
  5. Toss lightly to mix.
  6. Cover and chill for 6 to 24 hours.
