Instructions

  1. Cook onion in butter over moderate heat, stirring, for 4 minutes.
  2. Add broccoli, stock and curry and season to taste.
  3. Simmer mixture, covered, for 30 minutes.
  4. Puree mixture in processor in batches, transferring it to a saucepan.
  5. Add cream and heat over low heat.
  6. Garnish with croutons or scallions.
