Instructions

  1. In skillet, heat oil over medium low heat.
  2. Cook garlic, half the parsley and the salt and pepper til fragrant, about 2 minutes.
  3. Add tomatoes, lemon rind and sugar.
  4. Saute over medium-hig heat until tomatoes are softened, about 5 minutes.
  5. Mix in lemon juice and remaining parsley.
  6. Makes 1 cup.
