Instructions

  1. Set oven to 325 degrees.
  2. Grease a 9-inch square pan.
  3. In a mixing bowl, beat butter and sugar; beat in egg.
  4. Combine flour and baking powder; stir into egg mixture.
  5. Press lightly into a prepared baking dish.
  6. Spread pineapple over crust; set aside.
  7. For topping: In a mixing bowl, beat butter with sugar.
  8. Beat in eggs, then stir in the coconut.
  9. Spread over pineapple in the baking dish.
  10. Bake for 30-35 mins, or until golden brown.
