Instructions

  1. Combine marinade ingredients in a deep dish.
  2. Add chicken and marinate for a couple of hours or overnight.
  3. Combine the crumb ingredients.
  4. Drain chicken from marinade and press into the breadcrumbs.
  5. Heat oil in a large frying pan.
  6. Add chicken and cook on medium heat for 20 minutes or until golden and cooked through.
  7. Serve with 1/2 cup mayonnaise mixed with the juice of 2 limes and 2 tablespoons olive oil.
