Ingredients

2 3/4 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cup light brown sugar

3/4 cup sugar

3/4 cup butter, melted

3/4 cup buttermilk

1 tablespoon vanilla

3/4 teaspoon orange extract

2 large eggs

3/4 cup dried sweetened cranberries

2 tablespoons sugar, for sprinkling

3/4 teaspoon lemon extract

3/4 cup mandarin orange, whole or chopped
Instructions
- Mix dry ingredients.
- Mix wet and ingredients and add to dry, and fold in with spatula.
- Fold in fruit.
- Add to tins (greased).
- Sprinkle with sugar.
- Bake at 375°, 20-25 min.
- NOTE: I use texas-sized muffin tins.
- This makes 6, and I have enough batter leftover for two muffins.
- It freezes beautifully.
