Instructions

  1. Whip butter in large bowl until smooth.
  2. Add sugar and mix well.
  3. Add egg, lemon juice and zest; beat well.
  4. Combine and sift dry ingredients and gradually add into butter mixture.
  5. Mix well after each addition.
  6. Shape dough into 2 logs, (1 and 1/2" x 6").
  7. Wrap each in plastic wrap.
  8. Chill for 2-3 hours (or up to a week.) Preheat oven to 350°F.
  9. Cut logs into 1/4-inch-thick slices.
  10. Place on greased cookie sheets.
  11. Bake about 15 minutes or until edges are light brown.
  12. Transfer to wire rack to cool.
