Instructions

  1. Cut up the italian sausage in 1 inch pieces.
  2. Mince garlic.
  3. Wash and peel potatoes.
  4. Cut up the peppers, onions, mushrooms and potatoes in large chunks.
  5. Mix together the olive oil, balsamic vinegar and herbs.
  6. Combine everything in a roasting pan or large casserole dish.
  7. Stir well to coat the vegetables and sausage.
  8. Bake uncovered at 350 for at least an hour.
