Instructions

  1. Spread cream cheese on one side of the tortilla, completely covering it.
  2. Top the cream cheese with the black beans and onion.
  3. Top the beans with the cheddar and fold over.
  4. Heat skillet to medium.
  5. Brush one side of folded tortilla with melted butter.
  6. Put the quesadilla butter side down in skillet.
  7. While that side is cooking, brush butter on the other side.
  8. When lightly browned, flip.
  9. When both sides are lightly browned, remove from skillet and serve with sour cream and salsa, if desired.
