Instructions

  1. Preheat oven to 425.
  2. Coat jellyroll pan with cooking spray.
  3. Pour buttermilk into bowl.
  4. In separate bowl combine dry muffin mix and next 6 ingredients.
  5. Dip chicken in buttermilk, then coat with breadcrumb mixture.
  6. Place on pan and spray chicken with cooking spray.
  7. Bake 40 to 50 minutes.
