Instructions

  1. Preheat oven to 400°F.
  2. Soak oatmeal in liquid until softened, about 10-15 minutes.
  3. Add fruit pulp and mix.
  4. Stir in salt, soda and baking powder.
  5. Add flour and stir to blend- Don't over stir!
  6. Bake until lightly browned and a toothpick inserted into the center of one of the muffins comes out clean, about 15 minutes.
  7. These freeze well.
